This blueberry smoothie is creamy, refreshing, and naturally sweet while staying completely vegan, dairy free, and banana free. Made with frozen blueberries, cashews, and a Medjool date, it blends into a thick and creamy smoothie with bright blueberry flavor and a smooth cashew milk base.

Ingredients
  

  • cups blueberries
  • 3 tablespoon raw cashews
  • 1 medjool date
  • ¾ cup water (or hydrogen water)
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon juice

  1. Add the cashews, water, and Medjool date to a high speed blender and blend for about 45 seconds until smooth and creamy, creating a quick cashew milk base.
  2. Add the frozen blueberries, lemon juice, and vanilla extract.
  3. Blend again until thick and fully smooth.
  4. Pour into a glass and enjoy immediately.
