Lemon Smoothie | Fresh, Creamy & Zesty

This fresh, zesty lemon smoothie blends bright lemon juice and zest with creamy soy milk and frozen banana for a lightly slushy, refreshing texture. It is easy to make, naturally dairy free, and perfect when you are craving a bright, citrus forward lemon banana smoothie.

Ingredients
  

  • ¾ cup unsweetened soy milk
  • ½ frozen banana
  • 2 tablespoon fresh lemon juice
  • 2 teaspoon lemon peel zest
  • tbsp maple syrup
  • 1 dash salt
  • ½ cup ice cubes

Method
 

  1. Wash a lemon then finely grate the peel to get 2 teaspoon of lemon zest before cutting in half and sqeezing out 2 tablespoon of fresh lemon juice.
  2. Add all the ingredients to a Vitamix or high speed blender and blend until smooth.
  3. Pour into a glass and enjoy right away!
