Lemon Blueberry Smoothie | Refreshing & Creamy

The first time I tried making this lemon blueberry smoothie, I wasn't quite sure what to expect, but after a few sips I fell in love with the fresh, bright lemon flavor. The grated lemon zest is what really makes this smoothie special, giving it a vibrant citrus taste that fresh lemon juice alone can't match.

Blueberries, banana, and creamy soy milk create a smooth, creamy base that pairs perfectly with the bright lemon flavor for the perfect balance of sweet, tart and refreshing flavors.

I tried making this smoothie with ½ cup of coconut water, but I found it to be a little too thin and lacking in flavor. Somehow the creaminess of soy milk really makes the lemon flavor pop while creating a much richer and more satisfying smoothie.

However, if you're looking for a fresh and hydrating summertime drink, coconut water is a great substitution, especially if you want it to taste more like a refreshing blueberry lemonade smoothie.

Banana adds natural sweetness and a creamy texture to this lemon and blueberry smoothie while helping balance the tartness of the lemon. This blueberry lemon smoothie is also packed with antioxidants from blueberries and vitamin C from fresh lemon, making it a refreshing way to enjoy more fruit.

Lemon Blueberry Smoothie Recipe

  • 1¼ cups frozen blueberries
  • ½ cup unsweetened soy milk
  • 1 medium banana
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Wash the lemon well and gently roll it on the countertop using the palm of your hand to help release more juice.
  2. Finely grate 1 teaspoon of lemon zest, then cut the lemon in half and squeeze out 2 tablespoons of fresh lemon juice.
  3. Add the frozen blueberries, soy milk, banana, lemon juice, and lemon zest to a high-speed blender.
  4. Blend until smooth and creamy.
  5. Pour into a glass and enjoy immediately.

  • Swap the soy milk. Unsweetened almond milk, oat milk, cashew milk, or another favorite plant milk all work well. I love soy milk because it creates the creamiest texture and makes the lemon flavor stand out even more.
  • Make a blueberry lemonade smoothie. Replace the soy milk with coconut water for a lighter, more refreshing smoothie that tastes similar to a blueberry lemonade smoothie. It's perfect on a hot summer day when you're looking for something extra hydrating.
  • Make it sweeter. If your blueberries or lemon are especially tart, add a drizzle of maple syrup.
