I was inspired to create this lemon smoothie while testing a lemon chia pudding recipe, where I discovered and loved the bright citrus taste and knew I had to turn those flavors into what is now one of my favorite lemon smoothie recipes.

I used unsweetened soy milk and frozen banana to create a creamy base, while fresh lemon juice and lemon zest deliver the best tasting lemon flavor. I only used half a banana, so the lemon would truly shine without the banana overpowering it.

It is key to use frozen banana along with half a cup of ice to give this vegan lemon smoothie a slightly thicker texture; otherwise, it will be way too thin. You could also freeze the lemon juice into cubes for an even thicker blend, but fresh lemon juice works as well.

Lemon Smoothie Recipe

  • ¾ cup unsweetened soy milk
  • ½ medium banana frozen
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 1½ tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 dash salt
  • ½ cup ice cubes

How to Make a Lemon Smoothie

  1. Wash the lemons thoroughly, then grate the outer yellow peel to make fresh lemon zest. Then cut and squeeze the lemon to get 2 tablespoon fresh lemon juice.
  2. Add all ingredients to a high power blender.
  3. Blend until smooth and creamy.
  4. Taste and adjust sweetness or lemon to preference.
  5. Pour into a glass and enjoy immediately.

Tips and Substitutions

  • Add more frozen banana for a thicker smoothie with more banana flavor.
  • This recipe is already dairy free with soy milk, but almond milk, cashew or oat milk also work if preferred.

Ingredients
  

  • ¾ cup unsweetened soy milk
  • ½ frozen banana
  • 2 tablespoon fresh lemon juice
  • 2 teaspoon lemon peel zest
  • 1½ tbsp maple syrup
  • 1 dash salt

Method
 

  1. Wash a lemon then finely grate the peel to get 2 teaspoon of lemon zest before cutting in half and sqeezing out 2 tablespoon of fresh lemon juice.
  2. Add all the ingredients to a Vitamix or high speed blender and blend until smooth.
  3. Pour into a glass and enjoy right away!
